2 1/4 C. whole spelt flour or 1/2 whole and 1/2 white.
3 t. golden flaxseed meal
1/2 t. sea salt
1/4 t. baking soda
1/2 t. stevia powder or 1/3 C. maple sugar
1 C. chopped walnuts (opt.)
1 bag (11.5 oz) bitter sweet or semi-sweet chocolate chips (Ghirardelli is best)

3/4 C. organic butter, softened
or 1/2 C. butter and 1/4 C. cocoa butter (melt)
1 organic egg
2/3 C. maple syrup
1 T. blackstrap or regular molasses
1 1/2 t. vanilla
In a medium bowl, combine dry ingredients and set aside. In another medium bowl, cream butter and organic egg, then add the remaining wet ingredients. Mix well. Add dry ingredient mixture. Mix thoroughly. Drop by spoonful onto a greased cookie sheet. Flatten with a wet fork and bake at 365º for 14-16 minutes. Makes 34 cookies.
