6 – 7 C. rolled oats
1/2 – 1 C. whole spelt flour
1/2 C. oat bran
1/4 t. stevia powder or 3 T. maple sugar
2 t. Golden flaxseed meal
1/2 t. sea salt
1/2 C. each walnuts and almonds, chopped
1/2 C. each raisins and cranberries or other dried fruits (put in after baking)

1/2 C. olive oil or walnut oil (more if needed)
2/3 C. maple syrup
1/8 C. molasses
1 T. vanilla extract
1/4 C. water, rice milk, or almond milk
Heat oil, maple syrup, water, and vanilla in a large roasting pan until warm and thinned, stirring to mix. Stir in oats with a wooden spoon. Toast the flour lightly in the oven or a skillet for a few minutes. Add the rest of the dry ingredients, and mix well. Preheat oven to 325º. Bake in a roasting pan or place in cake pan(s) and bake at 325º for 40 minutes, turning with a spatula every 10 minutes. The granola becomes crisper as it cools.
