Prune Oatmeal Fiber Cookies by Janis Betz
2 C. whole spelt flour
or 1 1/2 C. whole spelt flour
& 1/2 C. vanilla Rice Protein Powder
1 t. xanthan gum
1/2 t. baking soda
3/4 t. sea salt
1/3 C. maple sugar or 1/2 t. stevia
1/4 C. oat bran
2 1/2 C. rolled oats
3/4 C. black or English walnuts
1 1/2 t. ginger (or ginger/cinnamon mix)
(op) 3/4 C. dark chocolate chips

1 organic egg
1/3 C. light oil
3/4 C. maple syrup or honey
2-3 T. molasses
1 t. vanilla
1/4 C. applesauce
1/3 C. prune paste
(Put prunes in sauce pan and fill with
water to top of prunes. Simmer low for 5-10 min. or until soft and mushy. Puree in blender or food processor – freeze extra for later use.)
In one bowl, combine dry ingredients. In another bowl, mix all the wet ingredients. Add the dry and wet ingredients together and mix well. Spray the cookie sheet with a vegetable spray. Drop the cookie dough by spoonfuls onto the cookie sheet, and flatten with a wet fork. Bake 360° for 16-20 min. Makes 4 dozen 2 inch cookies.
Pumpkin Oatmeal Cookies by Janis Betz
Combine all the above dry ingredients except ginger and chocolate. Add the following:
2 t. cinnamon
1 t. ginger
1/2 t. nutmeg
1/4 t. allspice
Combine the egg, oil, and maple syrup or honey plus the following:
2 t. vanilla
2/3 C. pureed pumpkin or butternut squash
