2 C. whole spelt flour
(or 1 C. white spelt and 1 C. whole spelt)
1 T. baking powder
4 t. golden flaxseed meal
1/2 t. sea salt
1/3 t. stevia powder or 1/4 C. maple sugar

1 organic egg
1 T. light olive oil
2 T. maple syrup
1 C. rice milk or water; add if need more to get a smooth pourable consistency.
Opt. Add 1 C. berries.
In a medium bowl, combine dry ingredients. In another medium bowl, beat the oil, maple syrup, and organic egg. Mix in the rice milk. Add dry ingredient mixture. Beat until large lumps disappear. Add more rice milk if it is too thick. Cook on a lightly greased skillet (medium heat) or griddle (350º). Flip when bubbles appear.
